Although it is commonly known that rice grown in the Northwest of Vietnam is among the finest ones, Nuong glutinous rice is on top of this list - creamed and rich in nutrition.

When cooked, the glutinous rice are round and shiny and the sweet, fragrant, and soft taste is rich. Someone once tasted the delicious sticky rice dish made by skillful hands of the ethnic people here can feel a very special flavor, different from other types of sticky rice. 

The way to make Dien Bien sticky rice is also more complicated than other types of rice. In order to have a pot of sticky rice, the Thai people living in Dien Bien have to take the rice to soak for at least 8 hours. When soaking rice, we just pour water over the surface of the rice about 2 knuckles, a little more water than other types of rice because upland sticky rice will absorb water and swell.

After soaking the rice, people put the rice to the special wooden pot of the Thai people to cook sticky rice. This type of wooden pot is very tight, so the rice in the pot is usually cooked very quickly because the steam does not leak out.

Unlike other types of sticky rice that only need to be cooked once, Dien Bien sticky rice has to go through twice to get delicious sticky rice. In the first time, when the sticky rice is fragrant, the rice has just ripe, it is poured out, spread out the stick with the chopsticks, let it cool for a while and then poured again on the wooden pot. Only when this second sticky rice is cooked, it can be cooked evenly. Dien Bien sticky rice is sweet and when eaten, it does not stick hands like other sticky sticky rice.
